Engine Breaking Down at 100kms per Hr

I have an intermittent problem. If I am travelling in 5th gear @ 100kms the engine begins missing and breaking down (Similar to running out of fuel or spark break down).
Spark:
I have checked spark, and it does not seem to be an issue. Plugs new and clean. New battery and spark strong. Coil resistance 50 Ohms secondary winding however primary 0 Ohms? Timing plate resistance also 0 Ohms vs spec 2-5 ohms? Still spark seems to be fine.
I have dismantled and cleaned the vacuum fuel tap and completely dismantled the carburettors (Diaphragms all OK). It seems like a fuel issue however I can’t find a problem.

Any ideas???
