Runs on Choke

My birth father passed away 10 years ago and I just was given his 95 Harley Dyna Low. I’ve been a Harley owner my whole life, last bike was a SE Dyna Wide, but haven’t had one for the last 10 years til now. The problem is that the bike runs and idles great with the choke on, but when it’s off she sputters, caughs and wants to shut down. I’ve been researching and service manuelling extensively, but would love some input from the right crew. I would really appreciate any helpful input. I’m no mechanic, but I know my way around the engine.
