good question there ,you will have to find the bore and stroke of the two diff engines,the vt1100c2 bore is,3.440(87.5mm)stroke is,3.600(91.4mm)if the stroke of the two engines are close it should work if meashurement across engine block cylnder stus are the same,but as for cost,check valve size between the two engines it might be better to put the bigger heads on have them milled to keep compresion the same or even better to raise compression,and add higher lift cams. the hotter cams bigger valves and higher then stock compression will give more punch for the buck spent,if the stroke is much greater on the 1100 compared to the 750 it will mean engine centerline will be higher ,water cross over will have to be from 1100, plus the added deck hieght of the new engine might interfear with gas tank frame ect..... but great question let me know out come please
