700 is a LOT of money for one of these bikes, but if it as good as you say, then not so bad. Very unusual to find one that good.
If you haven´t already, open an ebay and paypal account and set up a search for parts for this bike. As soon as you can, get a service manual, preferably a factory one.
Most Jap bike dealers can not or will not service anything over 10 years old, so you may have to find a good independent shop or, better yet, learn to do a lot of the work yourself. To this end, start buying tools.
Even with so little mileage, it´s amazing that everything is in good shape, the previous owner must have taken great care of it.
