Regarding Carb Overflows/ Stuck Floats / Leaking Fuel

I have a 1981 CB750C that I´ve been restoring this summer. Great fun and the bike is really coming together and is a blast to drive.
Yesterday, after changing the oil and running it to check for leaks, I noticed fuel POURING out of the carb overflow tubes (right onto the exhaust pipes - who was the genius who designed THAT?!!!).
This disturbed me for many reasons, but the foremost was that I paid good money to have the carbs rebuilt in July and here they are %&#!¤in´ fuel everywhere!
Called the guy, and he said it was likely some sediment, rust flakes from the fuel tank, or even dog hair (I don´t own a dog, but OK...) in there. His solution was to put a collector (coffee can) under the overflow tubes, open up all the carb drain screws, drain the fuel, then turn the bike over for a bit and let some fuel flow through the carbs, hopefully cleaning out whatever debris had gotten in there.
After the first attempt, two of the three leaking carbs had stopped. Did it again and the third one stopped.
Voila´! I thought I was looking at a pain in the %&#!¤- taking the carbs off, cleaning them, etc. and a simple \
