as for the bike not staying running i had an issue like that, it would stay running with choke but not with twisting throttle or idling i replaced the battery and it solved the problem, the bike has an electric fuel pump and when the rpms are high i guess the stater puts out enough juice to keep it running but not at idle or cranking the throttle and as for the clutch i had the same issue and replaced the clutch, slave cylinder and master cylinder but what was happening is that V65´s run at a very high temp and the DOT4 fluid breaks down from the heat and expands and you lose all free play in your clutch lever and you get slipping. I replaced my fluid with a DOT5.1 and has worked great since so remember DOT 5.1 not DOT 5, DOT 5 is a silicone based fluid and will gel up and ruin your clutch components. I hope this helps.
