Yes it´s possible to shift without a clutch. I once drove a bike home twenty miles with a broken clutch cable [careful route-planning and some luck]. Racers use ´speed-shifting´ all the time but it can´t be good for gearbox.
The wheel moving while up on the stand could be a not-quite-open clutch or just fluid friction with the oil between the plates. Fairly common and probably nothing to worry about if you don´t sit there gripping the lever for hours on end.
