81 yama xs 400 clutch function/ is it needed to shift gears?

I have an 81 yama xs 400. the bike was unused for almost 2 years cause valvetrain damage. I bougth another frame in a yunkyard affortunately the same year model and engine, but with twisted front shocks maybe cause a front hit. I transplanted that engine that looked clean and with thight kick start and compression. I fired up the engine with 2 qts of castrol 20w-50 oil and started shifting the transmission with the back tire lifted i notice that all the gears shifted correctly with no problem but without pressing the clutch then i press the back brake and the engine began to stall then it went off, i started it again put the trans in second gear tyhen i used the clutch and pressed the brake and the engine did not stall. I supposed that the clutch neutralized the trans in order to stop then i released the brake and then the clutch and the tire begun to spin again i pressed the clutch and i stop the tire with my hand then i released the tire but it spinned slowly to the point that i can stopped the tire again with my hand then i released the clutch and it started to spin normally with engine power. My question is. Does the clutch is needed to start going from first gear to sixth and backwards or it is only to stop so it wont stall and turn the engine off?, I pressed the cluth and shifted first gear and without releasing the clutch the tire begins to spin is that normal or does the cluch is sticked? is there a way to know when the clutch is sticked and how functioning normally?
