Carb tuning questions

Hey - I just bought a 1978 Yamaha XS750,
Ive got the bike running, but the carbs could use some tuning.
It runs but wont keep running, unless choked (even hot), and rubs a little rough. The bikes only got around 20,000 miles on it. Some carb tuning advice, or anything realy! would be apreciated.
