Exhaust and carburation

Hi. I just bought a 1990 California III and have a few questions. There were apparently 2 sizes of carbs on these bikes. How do I find what size mine are?
Also, I am looking for a source for good original style mufflers. Can anyone suggest where?
Two other things... can I get an original style seat somewhere?

And where would I find replacement instruments?
I´m looking forward to riding this beast. Any other hot tips are appreciated.
Thanks, and cheers.
