I have a 2002 750 and from all that i have read and through all the conversations with local dealers i would say go with the 750 if you are looking to buy a bike with great capabilities in upgrading but go for the 600 if you like that styling better. Personally i like the look of the 02 750 much more. In any case which ever bike you choose it will be a riot and every bike can be made to go as fast as you want it but straight off the show room you will find the 750 to beat the 04 600 just as badly as it would be the 02 or 03 600. One last thing, if i were you i would find a good personal seller to buy from because you might find a lot of the mods already on the bike and it isn´t impossible to find one in mint condition... take me for example, thats what i did and you didn´t find me dropping booku bucks for all the mods i wanted. e-mail me if you want to talk more...
